A cereal high in proteins as well as a rich source of fibre, filling and crunchy, Quinoa has a unique taste in itself and can be relished in different forms. Let’s try the Quinoa Salad today:
Ingredients:
Quinoa 1 cup
Water 2 cups
Cucumber 1 medium pc, chopped
Capsicum 1 small pc, chopped
Onion- Half pc (optional), chopped
Spinach 1 cup, washed and chopped
Olive Oil 1tsp
Lemon Juice 1tsp
Apple Cider Vinegar 1tsp
Salt and Pepper per taste
Method:
Soak the quinoa for 15 mins before preparing. Now, boil the quinoa in double amount of water. Let the water boil once, and then turn the flame to slow and cook till the water is completely soaked by quinoa (around 15 mins). Now cover it with a lid for 5 mins, for it to fluff up.
In a separate bowl, combine all chopped veggies (cucumber, capsicum, onion, spinach) and dress it up with lemon juice, ACV, olive oil, salt and pepper.
Once the quinoa is cooled, add it to the vegetable mixture and give a good stir.
Quick, healthy and tasty quinoa salad is ready to consume.
Note: If you like the salad tangy, add some cranberries or little resins to match your taste.
